Here's my sweet and spicy keto beef jerky recipe, no sugar included!
1 kg round roast or any cut low in fat. Remove as much fat as possible because it becomes chewy like rubber.
2 tsp garlic powder or garlic salt
1 tsp chili powder (or 2 tsp)
1 tsp salt or 3 tsp soy sauce (salt seems to work better)
1 tsp black pepper
1 tsp ginger powder (I have to try fresh ginger)
1 tsp onion powder (optional)
2 tsp paprika (optional)
1 tsp mustard (optional)
5 tbsp malt vinegar
2 tbsp Worcestershire sauce
9 packs of stevia powder (18 grams or around 1 - 2 tsp)
I slice around 3/16" thick, too thin and they will dry up and too thick and they will be hard to chew.

I actually forgot to put in the ginger powder and wanted a bit more salt so I threw that on after. It would have soaked in better to begin with though. The recipe is pretty good but can be fine tuned to a more exact desire. The sweetness is pretty well balanced with the spiciness.
In my dehydrator it takes around 4 hours. Or heat in an oven at 170 degrees F until dry. I then put it in a large zip lock bag and leave in the fridge. Cheers!
