I hope you’re all doing great and feeling your best. Today for Creative Sunday, I’m sharing a simple and delicious recipe with you all — Baingan ka Bharta. It's a classic North Indian dish that tastes amazing with roti, paratha, or hot steamed rice.

1 large eggplant

1 cup green peas

2 medium onions (finely chopped)

2 tomatoes (finely chopped)

4–5 garlic cloves finely chopped

½ inch piece of ginger (chopped)

1 tsp cumin seeds

½ tsp turmeric powder

1 tsp red chilli powder

Salt to taste

2–3 tbsp oil

Fresh coriander (chopped)

𝙍𝙤𝙖𝙨𝙩 𝙩𝙝𝙚 𝙀𝙜𝙜𝙥𝙡𝙖𝙣𝙩

Wash and dry the eggplant

Prick it with a fork and roast it directly on the gas flame

Roast until the skin turns black and the eggplant becomes soft

Let it cool, peel off the skin, and mash it well

𝙋𝙧𝙚𝙥𝙖𝙧𝙚 𝙩𝙝𝙚 𝙈𝙖𝙨𝙖𝙡𝙖

Heat oil in a pan and add cumin seeds

Add chopped onions and ginger and garlic, cook for a minute and saute until golden.


Add tomatoes and cook until soft

𝘾𝙤𝙢𝙗𝙞𝙣𝙚 𝙀𝙫𝙚𝙧𝙮𝙩𝙝𝙞𝙣𝙜𝙨

Add turmeric, red chilli, and salt

Add peas and cook on low flame until they soften

Now add the mashed eggplant and mix well


Cook for 5–7 minutes

Garnish with fresh coriander

Serve hot with roti, paratha, or phulkas and dal.
Adding a little ghee on top makes it even more delicious!
