Ingredients

🥕 1 cup of carrots, chopped
🍅 2 small tomatoes, chopped
🥔 2 small potatoes, peeled and diced
🧄 2 cloves of garlic, minced
🧅 1 small onion, chopped
🥄 2 tablespoons of oil
🍅 2 tablespoons of tomato paste
💧 6 cups of water
🍋 2 cups red lentils, washed
🥄 2 tablespoons of chicken bouillon
🌶️ 1/2 teaspoon of black pepper
🌶️ 1/2 teaspoon of crushed red peppers
🌿 1 teaspoon of dried mint
💧 1 additional cup of water for thinning


Instructions

1- Sauté Vegetables:

  • In a large pot over high heat, heat 2 tablespoons of oil.
  • Add the chopped carrots, tomatoes, potatoes, garlic, and onion to the pot.
  • Sauté the vegetables for about 5 minutes until they start to soften.

2- Add Tomato Paste & Lentils:

  • Stir in the 2 tablespoons of tomato paste, mixing well with the vegetables.
  • Add the washed red lentils to the pot and mix thoroughly.

3- Boil and Simmer:

  • Pour in 6 cups of water and bring the mixture to a boil.
  • Once boiling, reduce the heat to medium and let it simmer for 20 to 25 minutes until the vegetables and lentils are soft.

4- Blend the Soup:

  • Using a hand blender, blend the mixture until smooth.
  • If you prefer a thinner consistency, stir in an additional cup of water.

5- Season the Soup:

  • Season with chicken bouillon, black pepper, crushed red peppers, and dried mint.
  • Stir well and let the soup simmer on medium to low heat for another 5 to 10 minutes.

6- Final Adjustments:

  • Taste the soup and add more salt if necessary.
  • Serve hot and enjoy!
