Greetings dear friends, welcome to my blog. Today I am once again joining the weekly contest
. I thought it would be interesting to cook with peanuts, what could I do, it occurred to me to make something with chicken, and yes, chicken stew with peanuts sounded good to me. So I already had the chicken fillets, the garlic, the oil, I just had to buy the onion, the star ingredient, and make a quick chicken consommé.


This recipe is very simple, I was curious about the taste, how it would be? and yes, it was finger-licking good!.

The peanuts I bought are salted, so I only used the salt to season the chicken. This is my first recipe using peanuts and I can say that it was a good experience because it turned out delicious.

Ingredients



- 220 grams of chicken breast fillet
- 1 onion (72 grs)
- 1 clove garlic
- 1 potato (170 grs)
- 95 grs of salted peanuts
- 1 cup chicken broth
- 2 tablespoons soybean oil
- Salt to taste

Preparation


1.-. Cut the chicken fillets into small pieces.

2.-. Season the chicken with salt to taste. Then, put the two tablespoons of oil in a pot to sauté the chicken. Once ready, remove from the heat and set aside.

3.- Cut the garlic, finely chopped, the onion in cubes and the potato.

4.- In the same pot where we sautéed the chicken, cook the onion and garlic until they wilt a little.

5.- In a food processor, grind the peanuts and add them to the pot along with the onion and garlic. We also add the chicken broth and mix until there are no lumps. Then, add the chicken and the potatoes. Let it cook over medium low heat, covered, until the potatoes are tender.

Serve the chicken stewed with peanuts, I served it with rice.
