Layered Beef Shashlik with Aromatic Stuffing

Experience the rich flavors of the Middle East with this unique Layered Beef "Cake" Kebab. Perfect for BBQ enthusiasts, this dish combines lean beef, lamb fat, and aromatic spices, layered and grilled to perfection. Ingredients
🥩 1 kg lean, boneless beef shoulder brisket or similar cuts
🐑 300 g lamb fat tail fat "kurdyuk"
🥩 1 kg fatty ground beef
🧅 1 onion
🍅 1 tomato
🍄 400 g mushrooms champignons
🌿 1 bunch parsley or cilantro
🌶️ 1 hot chili pepper
🧅 1 red onion
🌿 2 tsp ground coriander
🧂 1 tbsp salt
🧂 1 - 1.5 tsp black pepper
Instructions
1- Preparation:
- Slice the beef and lamb fat into thin sheets and gently tenderize with a meat mallet.
- Coarsely grind the beef and mix with chopped vegetables onion tomato mushrooms, and spices salt pepper coriander. Knead and slap the mixture until it becomes sticky and cohesive.
2- Marinade:
- In a bowl, create a marinade by mixing the grated tomato, minced white onion, salt, pepper, and ground coriander.
3- Layering:
- On a flat work surface, lay out a sheet of plastic wrap. Start by layering the beef slices, generously brush with marinade, and salt the lamb fat sheets.
- Add a layer of the prepared ground beef mixture.
- Layer with sliced mushrooms, red onion, herbs, and finally, additional lamb fat.
4- Chilling:
- Wrap the layered "cake" tightly in plastic wrap and place it in the freezer for several hours until firm, about 2 hours.
5- Skewer Preparation:
- Once firm, slice the "cake" into rectangles about 5 cm by 2.5 cm.
- Skewer each piece carefully through the narrow edge.
6- Grilling:
- Grill the skewered kebabs over hot coals, turning frequently, until golden and cooked through, approximately 12 minutes. Ensure a constant rotation for even cooking.
7- Serving:
- Serve hot with pickled onions and a garnish of fresh herbs for added flavor.
