Extra Moist Chocolate Cupcakes and Cake -by Sunscape

If you love chocolate as much as I do, you will love this super moist cake recipe. It is so simple to make, even a child could do it.

Chocolate Cake

1 Box Chocolate Cake Mix
1 Box Chocolate Pudding Mix
4 Eggs
1 teaspoon Vanilla
1/2 cup Milk or Cream
1 cup Sour Cream
1 cup Oil
Pinch of Salt

  • Pour all the ingredients into a large bowl and blend thoroughly.

  • Spray a 9 x9 cake pan with oil and put cupcake liners into a muffin pan and fill with the batter. Distribute the leftover batter evenly into the cake pan.

  • Bake at 350°F. Check the cupcakes around 15-20 minutes with a toothpick to see if they are done. Continue to bake the cake until finished.

Frosting

1 stick softened butter
2 1/2 cups powdered sugar
1/2 teaspoon vanilla
4 oz. cream cheese
2/3 cup cocoa powder
2 tablespoons milk (if needed)

  • Blend ingredients together until the frosting is nice and smooth. If needed, add a little milk for a better consistency. Frost the cake and cupcakes and watch how quickly they disappear. They are super moist and absolutely delicious.

You can use any combination of flavors for the cake mix and the pudding. I am going to try a yellow cake mix with banana cream pudding next. Perhaps, white cake and lemon pudding would go well together. The choice is up to you, what combos would you try to put together?
