Irresistible Kpomo Savory Soup (In My Mother’s Traditional Foodie Mood) 🥙

Am such in a foodie mood today to prepare and treat my family to a soup made basically with cow skin called “kpomo in my native Nigeria 🇳🇬 language which I made sure to bring here and share with my foodie community. In this recipe the cow skin “kpomo is the base ingredient because in preparation of this soup with okra many might choose to prepare it with red meat 🥩, chicken 🍗 or fish, but I have chose to prepare this soup 🍲 traditionally, making it my mothers foodie style since she tries to abstain from red meat 🥩 from time to time.

Cow skin “kpomo “ is one outer side of killed cows which usually is removed from the meat 🥩, roasted properly and soaked for a day or overnights to tender up before its properly scraped, cleaned and washed before it’s taken to the market for sale in small chunk slices. You can make many delicacies from this part of a killed cow like pepper 🌶 and onions 🧅 kpomo, vegetable soup using kpomo . Then other kinds of soups and vegetable recipes. Its quite a staple in my country Nigeria 🇳🇬
Here, I also decided to pound the washed and sliced okra with a mortar and pestle instead of grating them for more crunchiness because pounding the okra makes them softer, succulent and savory in soups just like methods I learned from my mother.
Here below I show you step by step through which you can make this irresistible savory kpomo soup 🍲.
INGREDIENTS:


2 big chunks of kpomo (cow skin) A plate of fresh okra Leaves 🍃 of uzuza (aroma flavorful herb) 2 hot fresh red peppers 1/2 teaspoon of chili powder 1/2 teaspoon of salt 1 teaspoon of dried crushed shrimps 2 chicken cubes 20 ml of red palm kernel oil
STEPS FOR PREPARATION:
Step 1.



First thing we will start with is to properly remove residuals from the kpomo (cow skin) and properly wash it satisfyingly.
Step 2.




We cut chop it into tiny pieces, then take it into a pot, adding some water to boil and season it properly.
Step 3.


Once it starts to boil, we add salt, chili 🌶 powder and a chicken cube here above


Cover to cook to tender



And we drain off the water in a basket since we don’t need it. And have the kpomo ready.
Step 4.



We wash and cut slice the okra above.

Slice the uzuza and the hot fresh pepper




And I used the mortar and pestle to pound the pepper and okra together to soften more.
Step 5.

And have the ingredients readily here.
Step 6.

Next is placing the pot of water on the cooker, we add salt, chicken cube, crushed dry shrimps and the red oil.

Allow the oil to cook a bit, then add some chili pepper, the uzuza leaves 🍃 and stir.
Step 7.


We add the pounded pepper, okra and stir properly to incorporate.


Allow to cook for about 2 minutes covered.
Step 8.


Then we add the pep-perish seasoned kpomo (cow skin). Stir for seconds and set it down to serve.

Serve this irresistible savory soup with stirred semolina, stirred yam 🍠 flour, mashed potatoes 🥔, mashed unripe plantains or mashed white rice for an enjoyable family lunch 🥙, especially for something different from the menu list. Its so delicious 🤤 that everyone will ask for more.
My daughter love ❤️ this soup and likes consuming it even without any carbs by the side which is more healthy.
