For the Lentil Salad:

  • 🥄 1 cup Lentils (soaked for about an hour)

  • 🌶️ 1 teaspoon Paprika
  • 🌶️ 1/2 teaspoon Cayenne
  • 🌶️ 1 teaspoon Garlic powder
  • 🐔 1 cube Chicken bouillon
  • 🧂 1 tablespoon Worcestershire sauce (W sauce)
    For the Sauce:
  • 🥛 1 cup Plain yogurt
  • 🧄 1 clove Garlic, minced
  • 🍋 1 Lemon, juiced
  • 🍅 1/2 cup Pico de gallo
  • 🍅 1 Tomato, diced
  • 🧅 1/4 Red onion, finely chopped
  • 🌿 1/4 cup Cilantro, chopped
  • 🌶️ 1 Jalapeño, seeded and diced
  • 🍈 1 Lime, juiced
  • 🧂 Salt to taste
  • 🧂 Pepper to taste
    Instructions:
  1. Prepare the Lentils:
    • Rinse and soak the lentils for about an hour. Drain and set aside.
    • In a large pot, add a little oil and sauté the garlic and onion until translucent.
    • Add the soaked lentils, coriander, paprika, cayenne, and garlic powder to the pot. Stir well to combine.
    • Dissolve the chicken bouillon in the Worcestershire sauce and add to the pot.
    • Pour enough water to just cover the lentils and bring to a boil. Reduce the heat, cover, and let simmer until lentils are cooked through and tender (about 20-25 minutes).
    • Adjust seasoning as needed.
  2. Prepare the Sauce:
    • In a medium bowl, combine the plain yogurt, minced garlic, and lemon juice.
    • Add in the pico de gallo, tomato, red onion, cilantro, and jalapeño. Mix well.
    • Season with lime juice, salt, and pepper to taste.
  3. Assemble the Salad:
    • Once lentils are cooked, let them cool slightly.
    • In a large serving bowl, mix the lentils with the prepared sauce until well coated.
    • Garnish with extra cilantro or a squeeze of lime juice, if desired.
