Transform a rustic loaf into a gourmet delight with this Savory Spinach & Artichoke Bruschetta. Perfect as an appetizer or a light meal, this dish combines the vibrant flavors of spinach, artichokes, and cheese atop a crunchy slice of bread.

Ingredients

🍞 1 rustic loaf of sourdough bread
🥬 1 cup fresh spinach leaves
🌿 1 can of artichoke hearts, drained and chopped, such as Reese Artichoke Hearts
🧀 1/2 cup grated Parmesan cheese, such as Kraft
🧄 1 clove garlic, minced
🧈 2 tablespoons extra-virgin olive oil, such as Colavita
🧂 Salt & pepper to taste
🌶️ 1/2 teaspoon red pepper flakes
🍋 Squeeze of fresh lemon juice


Instructions

1- Prep the Bread:

  • Begin by slicing the loaf of sourdough bread into slices about 1-inch thick. Set them aside.

2- Prepare the Spinach & Artichoke Mixture:

  • In a skillet such as a Calphalon Nonstick, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
  • Add the spinach leaves to the skillet and cook until wilted, about 2 minutes.
  • Pour in the chopped artichoke hearts and continue cooking for a further 2 minutes, mixing everything with a spatula.
  • Season with salt, pepper, and a squeeze of lemon juice, then remove from heat.

3- Assemble the Bruschetta:

  • In a small mixing bowl, combine the spinach and artichoke mixture with half of the grated Parmesan cheese.
  • Spread a generous amount of the mixture onto each slice of bread using a spoon.

4- Top and Grill the Bruschetta:

  • Preheat the oven to 375°F (190°C).
  • Arrange the bread slices on a baking tray such as Nordic Ware Natural Aluminum.
  • Sprinkle the remaining Parmesan cheese on top, followed by a dusting of red pepper flakes.
  • Bake in the oven until the cheese has melted and the edges of the bread are crispy, about 8-10 minutes.

5- Serve:

  • Remove from the oven and allow to cool slightly before serving. Enjoy the crunch with a robust explosion of flavor.
