Savory Mushroom & Spinach Crepes
Experience a taste of a French bistro at home with our savory mushroom and spinach crepes. This elegant dish features tender crepes filled with a sumptuous mixture of sautéed cremini mushrooms, fresh spinach, and a creamy sauce, topped with crumbled cheese and fresh herbs. Perfect for brunch or a sophisticated main course, these crepes are sure to impress.
Ingredients
🍄 1.5-2 cups sliced cremini mushrooms (Baby Bella mushrooms)
🧅 1/4-1/2 cup diced red onion
🌿 1 tablespoon chopped fresh thyme
🧄 1-2 cloves minced garlic
🧈 2 tablespoons Butter
🧂 1 teaspoon Salt
🌶️ 1/2 teaspoon Black pepper
🥬 4-6 cups fresh baby spinach
🥛 1/2 cup heavy whipping cream
🥞 4 Pre-made or prepared crepes
🧀 1-2 tablespoons crumbled cheese per crepe (such as Feta cheese)
🧀 2 tablespoons Grated Parmesan cheese
🌿 1 tablespoon Chopped fresh parsley
Instructions
1- Prepare the Ingredients:
- Slice the mushrooms and dice the red onion.
- Mince the garlic and chop the fresh thyme.
2- Sauté Vegetables:
- In a large skillet, melt butter over medium heat.
- Add the diced red onion and chopped fresh thyme, sautéing until the onion becomes translucent.
3- Add Garlic & Mushrooms:
- Stir in the minced garlic, then add the sliced mushrooms.
- Season with salt and black pepper.
- Continue to sauté until the mushrooms are tender and have released their moisture.
4- Cook Spinach:
- Add the fresh baby spinach to the pan.
- Sauté until the spinach is wilted and well combined with the mushrooms.
5- Make Creamy Filling:
- Pour the heavy whipping cream into the mushroom and spinach mixture, stirring to combine thoroughly.
- Let it simmer for a few minutes to thicken.
6- Cook Crepes:
- In a non-stick frying pan, cook each crepe until it is golden brown and tender, flipping once.
7- Assemble Crepes:
- Place a cooked crepe on a serving plate.
- Spoon a generous amount of the mushroom and spinach filling onto the crepe.
8- Add Cheese & Fold:
- Sprinkle with crumbled cheese and fold or roll the crepe.
- Drizzle more of the creamy sauce from the filling over the top.
9- Garnish & Serve:
- Garnish with chopped fresh parsley and a sprinkle of grated Parmesan cheese.
- Serve hot.
