🍀 Beetroot 150g.
🍀 2 Eggs.
🍀 An Onion.
🍀 2 fish chili pods
🍀 About 4 cloves of garlic.
🍀 curry leaves.
🍀 A piece of Pandan.
🍀 2 Tablespoon of coconut oil.
🍀 About 3 cinnamon sticks.
🍀 Salt as needed.
🍀 1/2 teaspoon of pepper powder.
🍀 1/2 Teaspoon of turmeric powder.
🍀 1/2 Teaspoon of curry powder.
🍀 1/2 Teaspoon of Fenugreek seed.
🍀 1 Teaspoon of Chili powder.
🍀 1 Teaspoon of Roasted curry powder.
🍀 1/2 Teaspoon of Mustard seed.
Method of making....
First of all, the beet root is washed and cleaned and cut into thin pieces. At the same time, onions and garlic. Fish and chilies are cut.
Next, take a pan and add 2 tablespoons of coconut oil. Place it on the stove, and once the oil is heated, add a few mustard seeds. When they begin to pop, add cinnamon, fenugreek seeds, and sliced onions, allowing them to sauté until fragrant and slightly golden.
Now, add the chopped beetroot, curry leaves, pandan leaves, salt, and a little chili powder to the same pan. Mix everything well. Stir-fry the mixture and cook for about 4 minutes.
Now, add the eggs, turmeric powder, chili powder, black pepper powder, and roasted curry powder to the pan. Mix everything thoroughly. After 2 minutes, remove it from the heat.
This beetroot and egg combination is a flavorful blend of spices. It pairs wonderfully with rice or roti, making it a healthy and colorful addition to any lunch or dinner.
