Sweet Start For The Day With Arabika Flores Bajawa

「 Sweet Refreshing Coffee 」

This time, I am traveling through coffee to a region in the southernmost part of Indonesia, Flores. This region is known for its beautiful volcanic mountain range and it is located next to the world famous komodo dragon island in East Nusa Tenggara. The coffee grown in this region is known for its floral aroma, with light to medium mouthfeel (body). While flavor varies from one grower to another, typically it will feature some chocolatey and a hint of caramel sweetness which is great to be paired with any type of milk.

Interestingly, the coffee roaster where I live, they have some selections that are unique and from outside Java. Among others that I always purchase, like Toraja, I decided to get Bajawa from Flores. This is one of those coffee that I rarely find around me and also it’s my first time buying a 100gr of coffee.

Bajawa from this roastery has a natural process with high level sweetness. It has higher acidity compared to other coffee which means it’s a lot more refreshing and gives you that aftertaste as if you’re eating an orange juice. This is why even in their taste notes, it mentions green apple with a hint of caramel to it.

Since it’s early morning and pretty hot where I live & I have no ice cube, it made more sense to have something made with condensed milk. It’s going to be pretty concentrated just like when it’s made with a phin filter. But this one was way better and it’s more well-extracted.

Moka pot extraction

I am making it with a moka pot (percolator) and this is how I made it. I made it a bit diluted with water and with about 4 tea spoons of coffee. Make sure to use hot water before brewing because that’ll help smoothen the process of extraction.

Once it’s done, pour the coffee into the condensed milk and then voila! It’s done. It has this sweet and nutty taste to it that’s super pleasant. It made a great pick up coffee if you need to wake up and get ready for the day.

I would recommend this coffee if you like espresso based drinks such as latte as it goes well with it. This is one of those drinks better suited for espresso than filtered coffee.
