Ingredients

🥘 1 kg fresh mussels, cleaned
🧈 2 tablespoons unsalted butter
🧅 1 medium onion, finely chopped
🧄 2 garlic cloves, minced
🥕 1 carrot, diced
🍷 1 cup white wine
🌾 1 teaspoon Alsace saffron threads
🧂 Salt, to taste
🌾 Freshly ground black pepper, to taste
🥄 2 tablespoons heavy cream
🌿 Fresh parsley, chopped, for garnish


Instructions

1- Prepare the Mussels:

  • Rinse the mussels under cold water, removing any beards and discarding any with open shells that do not close when tapped.

2- Cook the Vegetables:

  • In a large pot, melt the butter over medium heat.
  • Add the chopped onion, garlic, and carrot.
  • Sauté these ingredients until the onion is translucent and the carrot is tender, about 5 minutes.

3- Infuse the Saffron:

  • Pour the white wine into the pot and bring it to a simmer.
  • Add the Alsace saffron threads.
  • Let them steep in the wine for about 2 minutes, allowing their flavors and color to infuse.

4- Cook the Mussels:

  • Increase the heat to high and add the cleaned mussels to the pot.
  • Cover the pot and cook for about 5 minutes, shaking the pot occasionally, until all the mussel shells have opened.
  • Discard any that remain closed.

5- Finish the Soup:

  • Reduce the heat to low and stir in the heavy cream.
  • Season with salt and freshly ground black pepper to taste.

6- Serve:

  • Ladle the soup into serving bowls and garnish with freshly chopped parsley.
