Ingredients
🥘 1 kg fresh mussels, cleaned
🧈 2 tablespoons unsalted butter
🧅 1 medium onion, finely chopped
🧄 2 garlic cloves, minced
🥕 1 carrot, diced
🍷 1 cup white wine
🌾 1 teaspoon Alsace saffron threads
🧂 Salt, to taste
🌾 Freshly ground black pepper, to taste
🥄 2 tablespoons heavy cream
🌿 Fresh parsley, chopped, for garnish
Instructions
1- Prepare the Mussels:
- Rinse the mussels under cold water, removing any beards and discarding any with open shells that do not close when tapped.
2- Cook the Vegetables:
- In a large pot, melt the butter over medium heat.
- Add the chopped onion, garlic, and carrot.
- Sauté these ingredients until the onion is translucent and the carrot is tender, about 5 minutes.
3- Infuse the Saffron:
- Pour the white wine into the pot and bring it to a simmer.
- Add the Alsace saffron threads.
- Let them steep in the wine for about 2 minutes, allowing their flavors and color to infuse.
4- Cook the Mussels:
- Increase the heat to high and add the cleaned mussels to the pot.
- Cover the pot and cook for about 5 minutes, shaking the pot occasionally, until all the mussel shells have opened.
- Discard any that remain closed.
5- Finish the Soup:
- Reduce the heat to low and stir in the heavy cream.
- Season with salt and freshly ground black pepper to taste.
6- Serve:
- Ladle the soup into serving bowls and garnish with freshly chopped parsley.
