--- Hello everyone!!! I hope you’re doing well or are trying to be well. I’m doing fine. For the last two days I’ve had this lightness over me. I think it’s a bit of that “couldn’t care less” feeling. Anyway. Today I really fancied making kısır and lentil patties, partly because I’ve been craving them, and partly to use up what I’ve got at home. These are the sort of things you simply have to have for a gathering, and I’ll share the way I learnt to make them. Today it’s just kısır though. I thought making both might be a bit too much in one go. So I try not to make it too often at home, but I do like it myself. There’s only so long a person can hold out. I thought I’d shared it with you before, but when I checked, I couldn’t find anything. So this can be the first time then. It’s not quite as extreme as ashure, but I do have a bit of that “a bit of everything” approach. I add flavours I think go well together, just the way my grandma taught me.

### Ingredients - 2 cups fine bulgur - 3 cups hot water (to soak the bulgur) - 3 lettuce leaves - Half a bunch of parsley - 3 spring onions - 1 tbsp olive oil (for frying the onion) - 1 small cucumber - 1 tomato - 1 medium green pepper (I used red kapia) - Half a tea glass olive oil (add more if needed) - 3–4 tbsp pomegranate molasses - Black pepper - Chilli flakes - Cumin - Salt - 1 tbsp tomato paste - 1 small onion - Half a cup sweetcorn - 3–4 gherkins - 2 medium carrots - A quarter of a red cabbage - Juice of 2 lemons
I know, I know – that’s a lot of ingredients, but we’re in “trust the process” mode. Believe me, it’ll be worth it in the end. It doesn’t actually take too long to make, but like most dishes, prepping the ingredients is the long bit. Chopping everything up small is the biggest chore for me. I think I might just get myself a food cutter, it would really make life easier.

I only put them in separate bowls for the look of it, you can manage with two or three containers. First thing is to put the bulgur in water, cover it and let it sit until it reaches an edible consistency. This is the part I like – apart from heating the water, I don’t have to stand over the hob much. You can use this time to prepare the other ingredients if you like. For something you can eat for two days, it’s a relaxed sort of prep.

--- Once the prep is done, I fry the onion in a bit of oil, then once it’s softened, I add the tomato paste. After cooking it a little longer, until those first lumps are gone and it’s a bit more fluid – it’s ready, and it’s time to combine everything. Honestly, describing it makes it sound so easy. If only it felt that way while making it… Anyway, knowing my clumsiness and liking my comfort, I just tipped everything into the biggest bowl I could find and mixed it. That’s it. Kısır’s done. It’s really one of my favourites and I think I could eat it every week. No need to exaggerate though 😂

Normally I can’t take too many photos while prepping because my hands are messy, but I think the one showing all the ingredients makes everything clear. As for how I chopped them, well, with Müge Anlı on in the background, I was swearing at the villains on the show and feeling like I was chopping them instead. Joking aside, when there’s something going on in the background, even the most boring jobs become bearable. That’s one of those moments for me. Tomorrow, if nothing gets in the way, I’d like to share the lentil patties with you. Don’t be fooled by the word “patty”, it’s a vegan recipe. ### Malzemeler - 2 su bardağı ince bulgur - 3 su bardağı sıcak su (bulguru ıslatmak için) - 3 yaprak marul - Yarım demet maydanoz - 3 adet taze soğan - 1 yemek kaşığı zeytinyağı (soğanı kavurmak için) - 1 küçük salatalık - 1 tane domates - 1 tane orta boy sivri biber (ben kapya kullandım) - Yarım çay bardağı zeytinyağı (az gelirse ekleme yapın) - 3-4 yemek kaşığı nar ekşisi - Karabiber - Pul biber - Kimyon - Tuz - 1 yemek kaşığı domates salçası - 1 küçük soğan - Yarım su bardağı mısır - 3-4 adet salatalık turşusu - 2 adet orta boy havuç - Çeyrek mor lahana - 2 limon suyu
Biliyorum, farkındayım çok fazla malzeme olduğunun ama "Trust the process" dönemindeyiz. İnanın sonucu güzel olacak. Yapımı o kadar sürmese de yine çoğu yemek gibi malzemeleri hazırlamak uzun sürüyor. Her şeyin küçük küçük doğranması benim için en büyük zahmet. Sanırım bir doğrayıcı alsam iyi olacak. İşimi aslında çok kolaylaştırır.

Ben sadece görsellik açısından ayrı tabaklara koyuyorum ama bence siz 2-3 kapla bu işi halledebilirsiniz. İlk iş bulguru suya koyup ağzı kapalı bir şekilde beklemek gerekiyor ki yenebilir bir kıvama gelsin. Bu kısımda belki su ısıtmak hariç çok fazla ocak başında beklemiyor oluşum beni sevindiriyor. Tabii bu süreçte isterseniz malzemeleri hazırlayabilirsiniz. Bence 2 gün boyunca yiyebileceğiniz bir şey için rahat bir hazırlık.

--- Benim için malzeme hazırlıkları bittikten sonra yağda biraz soğanı kavurduktan sonra, pembeleştiğinde içerisine salçayı ekledim. Salçayı da bir süre kavurduktan sonra ki o ilk topaklanması bitip de biraz daha sıvılaştığında tamamdır, sıra bütün malzemeleri birleştirmeye geldi. Aslında anlatırken ne kadar kolay göründü gözüme. Keşke yaparken de olsaydı... Neyse. Ben sakarlığımı bildiğimden ve rahatımı sevdiğimden olabilecek en büyük kaba her şeyi döküp karıştırdım. Bu kadar. Kısır hazır. Nar ekşisinin ve limonun verdiği o hafif ekşilikteki güzelliği size anlatamam. Benim gerçekten favorilerimden ve sanırım her hafta yiyebilirim. O kadar da abartmaya gerek yok 😂

Genelde malzemeleri hazırlarken ellerim kirli olduğundan çok fazla fotoğraf çekemesem de bence malzemeleri gösterdiğim fotoğrafta her şey açık. Nasıl doğradığıma gelirsem eğer, arkada Müge Anlı açık ve ben şerefsizlere söverken sanki onları doğruyormuşum gibi hissediyordum. Şaka bir yana arka planda yapabileceğiniz bir şey olduğunda en sıkıcı işler bile katlanılabilir hâle geliyor. Bu da onlardan biri benim için. Yarın ise sizlerle bir sorun çıkmazsa mercimek köftesini paylaşmak istiyorum. Köfte dediğime bakmayın, o da vegan bir tarif.
