Hello to all my dear friends of hive. Today I have decided to bring you something new and different that I have never told you about before, I am telling you about my experience growing Ajís cachucha. A little bit of context: First of all I start by telling all those who do not know me that I am from Cuba, specifically from the eastern part of the country. For several years now we have had a small farm near our house. In it I and some members of the family grow several crops. To mention some examples: spices such as garlic and chives, some vegetables such as malanga, plantain and yam). On the vegetable side we have planted tomatoes and lettuce, among many other products.

The truth is that all this journey over the years has been a good learning experience for me. This is partly what motivated me to write this post, to share with you a little of the experience I have gained and above all you can also learn something about working in the field. That said, let's start with today's protagonist: the aji cachucha.

Choosing the seeds.

Everything in life has a beginning and chili peppers are no exception, the magic lies within the seeds. Many of them contain what will be a strong and healthy plant, but for that to happen we must first make a selection.

We make this selection in order to take advantage of our land in the best possible way and not to waste it with plants that are not going to be born. There are several methods used to detect this, but I am only going to tell you about the way we do it here at the farm. How do we do it? What we do is simply prepare a small bed of soil to put the seeds in. Once we sow them we cover them with leaves or weeds from other plants. This is done because the seeds need a balanced humidity to be born, by covering them we achieve this. I tell you that there is also a curious method, this was mainly used by my grandparents. It consists of throwing some seeds in a glass of water and when some hours go by, the ones that sink are the good ones to sow and the ones that remain floating will not germinate. Did you know that?

Postures.

Now begins a new stage in the life of the chili plants, the birth of the postures, so to speak now is that they are girls. For the first seedlings to begin to be born, at least 15 days must pass and this depends on the seed or the soil in which they were planted.

In the image above you can see some of the specimens we have on the farm. These postures are already 40 days old, so they are almost ready for the next big step that we will see next: the transplant.

Transplanting.

The so-called transplanting is nothing more than taking out the small seedlings that we already had in the bed and putting them in the ideal soil so that they begin to produce. Now, so to speak, they are already teenagers. We usually do this process here when the plant is about 50 days old. Other farmers like to do it much earlier than that, it all depends on the soil where it is.

Care and obstacles.

This new stage that is now beginning is one of the most difficult for us to carry out, because the plants need several cares such as: cleaning of weeds, watering, fertilizing and pest control. In the country where I live (Cuba) this is difficult because we have several obstacles to get the necessary products. There is also the issue of drought, which is one of the most serious problems we face at the moment and as a consequence causes plants to die. Fortunately we still have a well dedicated to irrigation that maintains the water and has not dried up completely in spite of the drought we have. Here is a picture of it:

As a curious fact I tell you that this well is more than 60 years old and several generations have already used it for the same purpose. It is known here as one of the most fertile wells in the area, and in spite of the great droughts it never runs out of water.

The flowers.

We are getting closer and closer to the final prize (the fruits), but for that we first need the flower stage. This is one of the most beautiful, because it shows that the work done so far is paying off. They usually begin to appear 30 days after transplanting the plants and are characterized by being small and white. Once they come out, they take approximately 15 days to become a small chili bell pepper and another 25 days to be harvested.

The harvest begins.

Finally the long awaited moment has arrived, the fruit of several months of effort is beginning to manifest itself. Almost 4 months have passed since we sowed the seed until this day, so it is undoubtedly a moment of joy for all of us who work in the crop. Usually by this time the plant has a considerable size that even makes it difficult to move between them to pick the fruit. Comienza la cosecha 1 .jpg

The harvesting of chili peppers, as we Cubans say, "takes its own way", in fact it took me a little while to adapt, since not all the chili peppers on the plant can be harvested. You can only harvest the ripe or ripe ones, never the green ones. For example, I use 2 ways to differentiate them, the first one is by looking at them. For me it is easier because I have been doing this for a long time, but for someone new it would be more difficult. In that case the other method is by touching them. The soft ones are still no good, the shiny and hard ones are the good ones. Here is an example, the chili bell pepper on the left is green and the one on the right is scratched or painted as you want to call it. Sales and marketing.

Now that we have collected them, it is time to talk about how we make the real ones with them, hahaha. This is where the true inventiveness of the Cuban is formed, you can buy them raw or mashed. We commercialize them mainly in two ways, the first one is selling them for (x) quantity to street vendors or as we call them here "carretilleros". And the second way is mainly for the people near the farm. For those of us who live in Cuba this measure is a classic and above all universal: "The ice cream jar". jarrito de helado.jpg

Hola a todos mis estimados amigos de hive. Hoy he decidido traerles algo nuevo y diferente sobre lo cual nunca antes les había hablado, me refiero a contarles mi experiencia cultivando el Ajís cachucha. Un poquito de contexto: Primeramente comienzo contándoles a todos aquellos que no me conocen que soy de Cuba, específicamente de la parte oriental. Desde hace ya varios años tenemos cerca de nuestra casa una pequeña finca. En ella yo y algunos miembros de la familia sembramos varios cultivos. Por mencionar algunos ejemplos: especias como el ajo y el cebollín, algunas viandas como la malanga, el plátano y el ñame). Por el lado de los vegetales hemos sembrado tomates y lechuga, entre muchos otros productos.

La verdad es que todo este recorrido a lo largo de los años ha sido un buen aprendizaje para mí. En parte fue esto lo que me motivó a escribir este post, el compartirles un poco de la experiencia que he ganado y sobre todo puedan aprender algo ustedes también sobre el trabajo en el campo. Dicho esto, damos comienzo con nuestro protagonista de hoy: el ají cachucha.

Escogiendo las semillas.

Todo en esta vida tiene un comienzo y los ajíes no son la excepción, la magia se encuentra dentro de las semillas. Muchas de ellas contienen la que será una planta fuerte y saludable, pero para que eso pueda suceder primero tenemos que hacer una selección.

Dicha selección nosotros la hacemos buscando aprovechar nuestro terreno de la mejor manera posible y no desperdiciarlo con plantas que no van a nacer. Hay varios métodos que se utilizan para detectar esto, pero solo les voy a comentar la manera en la cual nosotros lo realizamos por acá en la finca. ¿Cómo lo hacemos? Lo que hacemos es simplemente preparar un pequeño cantero de tierra para poner las semillas. Una vez que las sembramos las tapamos con hojas o malezas de otras plantas. Esto se hace porque las semillas necesitan una humedad equilibrada para nacer, al taparlas lo conseguimos. Les cuento que también hay un método curioso, este sobre todo lo usaban mis abuelos. Consiste en echar unas semillas en un vaso de agua y cuando pasen algunas horas las que se hundan son las buenas para sembrar y las que se queden flotando no germinarán. ¿Lo sabían?

Posturas.

Ahora comienza una nueva etapa en la vida de las plantas de ajís, el nacimiento de las posturas, por así decirlo ahora es que son niñas. Para que las primeras plantitas empiecen a nacer deben pasar al menos 15 días y eso va en dependencia de la semilla o la tierra en la que fueron plantadas

En la imagen que les muestro arriba pueden ver algunos de los ejemplares que tenemos en la finca. Esas posturas ya tienen 40 días de edad, por lo que casi están listas para el siguiente gran paso que veremos a continuación: el trasplante.

Trasplante.

El llamado trasplante no es más que sacar las pequeñas posturas que ya teníamos en el cantero y ponerlas en el terreno ideal para que comiencen a producir. Ahora por así decirlo ya son adolescentes. Este proceso por lo general nosotros acá lo hacemos cuando la planta tiene alrededor de 50 días de edad. A otros campesinos les gusta hacerlo mucho antes de esa fecha, todo depende del terreno donde esté.

Los cuidados y obstáculos.

Esta nueva etapa que ahora comienza es una de las que más trabajo nos lleva a nosotros realizar, pues las plantas necesitan de varios cuidados como: la limpieza de malas hierbas, el regado, el abono y el control de plagas. En el país donde vivo (Cuba) se hace difícil esto, ya que tenemos varios obstáculos para conseguir los productos necesarios. También está el tema de la sequía, que es uno de los que más nos golpea actualmente y por consecuencia causa que mueran las plantas. Afortunadamente todavía contamos con un pozo dedicado al riego que mantiene el agua y no se ha secado por completo a pesar de la sequía que tenemos. Les dejo una imagen del mismo:

Como dato curioso les cuento que ese pozo tiene más de 60 años y varias generaciones ya lo han usado con el mismo cometido. Aquí se le conoce como uno de los pozos más fértiles de la zona, que a pesar de las grandes secas nunca se queda completamente sin agua.

Las flores.

Cada vez nos acercamos más al premio final (los frutos), pero para eso primero falta la etapa de las flores. Esta es una de las más bonitas, pues muestra que el trabajo realizado hasta el momento está valiendo la pena. Por lo general comienzan a salir a los 30 días de haber trasplantando las plantas y se caracterizan por ser pequeñas y blancas. Una vez que salen tardan aproximadamente 15 días para convertirse en un pequeño ajís y otros 25 para poder recogerlos.

Comienza la cosecha.

Por fin llegó el momento tan esperado, el fruto del esfuerzo de varios meses empieza a manifestarse. Desde que sembramos la semilla hasta este día han pasado casi 4 meses, por lo que sin duda es un momento de alegría para todos los que trabajamos en el cultivo. Por lo general para este entonces ya la planta tiene un tamaño considerable que incluso dificulta el moverse entre ellas para recoger el fruto. Comienza la cosecha 1 .jpg

La recolección del ajís como decimos los cubanos “lleva su maña”, de hecho a mi me costó un poco adaptarme, ya que no todo el ajís que tenga la planta se puede recoger. Solo se recolecta el que esté rayón o el maduro, nunca el verde. Por ejemplo yo uso 2 formas para diferenciarlos, la primera es mirándolos. Para mi es más fácil porque ya llevo tiempo en esto, pero para alguien nuevo sería más difícil. En ese caso el otro método es tocándolos. Los blandos todavía no sirven, los brillantes y duros son los buenos. A continuación les dejo un ejemplo, el ajís de la izquierda está verde y el de la derecha esta rayón o pintón como quieran llamarlo. Se diferencian por el brillo en su cascara. muestra de ajis.jpg

Venta y comercialización.

Ahora que ya los tenemos recogidos es momento de hablar de cómo hacemos los reales con ellos, jajaja. Aquí es donde se forma la verdadera inventiva del cubano, lo mismo los puedes comprar crudos que hechos un puré. Nosotros los comercializamos principalmente de dos maneras, la primera es vendiéndoselos por (x) cantidad a los vendedores ambulantes o como aquí los llamamos carretilleros. Y la segunda manera es principalmente para las personas cercanas a la finca. Para los que vivimos en cuba esta medida es un clásico y sobre todo universal: “El Jarrito de helado”. jarrito de helado.jpg
