Ingredients...

Eggplant 250g.
About 2 tomatoes.
1 Onion.
1 Teaspoon of lime juse.
About 2 green chilies.
2 Teaspoon of crushed chili powder.
1 Teaspoon of Pepper powder.
1/2 Teaspoon of turmeric powder.
Salt as needed.
Coconut oil for frying.

The order of preparation.

Step 1:-

First, cut the onions into round slices. At the same time, slice the tomatoes and green chilies as well.

Step 2:-
Next, thinly slice the eggplants as shown below, then wash and clean them thoroughly.

Step 3:-
Next, add a little turmeric powder and salt to the cleaned eggplant slices, and mix them well until evenly coated.

Step 4:-
Next, take a pan and add some coconut oil. Place it on the stove, and once the oil is heated, add the eggplant slices. Fry them until they turn golden brown and slightly crispy.

Step 5:-
Now, add the fried eggplant to a bowl. Then, add the sliced onions, green chilies, tomatoes, lime juice, chili powder, and a little salt. Mix everything well until all the ingredients are evenly combined.
